
What is Thakali?
A mountain cuisine, not a curry house menu.
थकाली खाना सेट — Thakali food travelled down from the high desert of Mustang with traders who ran salt caravans into Tibet. It is precise, balanced and unhurried: nothing is deep fried, everything is layered.
Born in Thak Khola
The Thakali people farmed the Kali Gandaki gorge between Mustang and Myagdi — the world's deepest valley, and the old salt road to Tibet.
The khana set
One brass plate, many bowls: rice or dhido, black lentil dal, seasonal tarkari, meat curry, gundruk, and three achars — refilled until you say stop.
Timur, not chilli heat
Himalayan timur pepper brings a citrus tingle instead of blunt fire. Everything is tempered in ghee and finished with jimbu herb.
Fermented & foraged
Gundruk and sinki are leaves fermented for weeks — mountain preservation turned into the sourest, most addictive part of the plate.
